PROGRAM OBJECTIVES:
To determine the students’ suitability for the occupation and the training process, to adopt a customer-oriented approach, to prepare the mise en place and dining room, to explain menus and dishes, to take and process orders, to receive and provide information in two of the three official languages, to perform billing and collection operations, to recommend and serve wines, to provide beverage service, to provide banquet service, to provide informal service, to provide formal service, and to integrate into the workplace.
PROGRAM OBJECTIVES:
The Professional Cooking program prepares students to practise the trade of professional cook. Aspiring professional cooks will acquire the knowledge, ability and attitude necessary to prepare the mise en place and work plan for service; plan the necessary elements for smooth service; apply hygiene, food safety, and occupational health and safety standards; cook various foods properly; present food in accordance with standards; prepare, season and store hors d’oeuvres, soups, meat, fish, vegetables, sauces, desserts and other food products in accordance with specific procedures; and create menus for various meals as well as table d’hôte menus, à la carte items and buffets.
The Board may, at its discretion, waive any or all of the afore-mentioned qualification requirements if it finds a suitable candidate who is a beneficiary of the James Bay and Northern Québec Agreement and who accepts, as a condition of employment, to follow a training plan determined by the Board
REQUIREMENTS:
- Fluency in two (2) of the three (3) official languages of KI (Inuktitut, English and French);
- Experience in adult education, and;
- Experience in multi-level classes.
ASSETS:
- Experience working in hotels and restaurants;
- Experience in teaching English and French as a second language.
- Knowledge of the Moodle platform.
CLASSIFICATION / SALARY / BENEFITS:
Salary & benefits as per the Teachers Collective Agreement of the Board: from $46,527 to $92,027 annually depending on experience and qualifications. All benefits are prorated based on the percentage of the task.
